Barbecue Butterflies
GOOD day readers! This is Daddy Bill with another choice recipe.
My goal is to offer recipes that are tasty AND healthy. I do hope
these recipes create an interesting diversion to us and our families...and
our palates!!!
This month's recipe is a summertime sizzler! "Barbeque Butterflies"
Butterfly pork chops, that is. This sensational marinated thrill
on a grill will send your neighbors into a frenzy once they catch
a whiff of what you are cooking. Once you prepare this for your
family and friends it will be a constant request, no, make that
a requirement to fix it at least once a week!
Servings: Serves four adults
Equipment:
A stovetop
Any grill of your choice. (I prefer any grill with a smoker lid)
Charcoal briquettes.
A long-handled fork or spatula.
A spray bottle filled with water.
A 1-2-quart saucepan
A slotted spoon
Cooking time: 20 minutes to 30 minutes. Depending on how
thoroughly cooked you desire.
Ingredients: Four large butterfly cut boneless and skinless
pork chops.
1 cup of white distilled vinegar
1 heaping tbsp. of pickling spice
2 tbsp. of brown sugar substitute
1 tbsp of garlic powder
1 small diced onion
1 small lemon
1 cup of Worcestershire sauce
2 cups of water
Directions:
First you will prepare your marinade. So set up all your seasonings
pre-measured to the side. Take your pickling spice and wrap it up
securely in a coffee filter or a piece of cheesecloth. Tying it
off with a piece of string or thread to keep the pickling spice
inside. Take your pickling spice package and place it in a 1-2 quart
saucepan. Take your lemon and squeeze the juice and seeds into the
saucepan atop the pickling spice. Combine the rest of your ingredients
and stir them gently with your slotted spoon being careful as not
to burst open your pickling spice pack. After this place your sauce
pan on your stove top at medium heat for 15 minutes stirring gently
all the while to blend all the ingredients into a sensational marinade.
After 15 minutes remove the saucepan from the stovetop and set to
the side and let cool for about 15 to 20 minutes.
While the marinade is cooling take your butterfly pork-chops and
rinse them under cool water. Then place them in a 1-2-quart bowl
and pour the marinade over them when it has cooled. Gently move
the pork-chops around in the marinade and set the bowl to the side
or in the refrigerator. Let the pork chops marinate for at least
an hour. It is at its best it you when let it marinate overnight
to fully season and tenderize.
Prepare your grill according to your specifications. You know how
you like your grill set up. The only thing that is really required
is that the grill is not too hot. Let your charcoal cool down until
you can leave your hand 8 inches over the grill for about 4 seconds
before you HAVE to remove it.
Place the marinated pork-chops on the grill and use the marinade
as a dip to keep the chops moist. Keep your spray-bottle of water
handy for sudden flare-ups.
Ten to fifteen minutes on each side should suffice to thoroughly
cook the chops.
After 20-30 minutes your meal will be done and you have to fight
off the neighbors, their kids, and their pets to serve you and yours
this delicious entree!
Have a merry meal and remember to take a 20-minute walk after the
food settles a little. It will do you some good!
